Foundations of Nutrition II: Diet and Disease

This is a three-unit asynchronous online nutrition course that explores the relationship between diet and disease.

The course is designed for current and future healthcare professionals.

Over the ten-week length of the course, students will study evidence-based nutrition guidelines in the following areas of wellness and disease: Nutrition screening, assessment, counseling and nutritional genomics Nutrition support (tube feeding and total parenteral nutrition), hospital and modified diets and food-drug interactions Nutrient digestion, the human microbiome and disorders of the gastrointestinal tract Hypertension and heart disease Diabetes and prediabetes Energy balance, weight management, overweight and obesity and metabolic syndrome Energy metabolism, inborn errors of metabolism, metabolic stress and respiratory disorders Liver and kidney disease Cancer and HIV/AIDS The course is taught by a Registered Dietitian Nutritionist (RDN) and Certified Diabetes Educator (CDE).
